Add warm water and olive oil to the dry ingredients.
Knead the dough on a floured surface until smooth, about 10 minutes.
Let the dough rise in a warm place until doubled in size, about 1 hour.
Preheat the oven to 475°F (245°C) with a baking stone or inverted baking sheet inside.
Punch down the risen dough and divide it into equal pieces.
Roll each piece into a ball and flatten into discs about 1/4 inch thick.
Place the discs on parchment paper and let them rest for 30 minutes.
Transfer the discs to the hot baking stone and bake for 5-7 minutes until puffed and lightly browned.
Remove from the oven and cover with a clean towel to keep warm.
