Start by preparing the onions, using a wide pan over medium heat.

Add olive oil to the pan, then add a lot of onions, thinking in terms of a 2 to 1 ratio of onions to fish.

Season the onions with salt and stir, then add a couple of bay leaves.

Cover the pan and let the onions cook for about 20 minutes, checking every couple of minutes and adding water if they look dry.

Once the onions are soft and sweet, add white wine vinegar to the pan.

Add un-toasted pine nuts and plumped raisins (soaked in warm water for 15 minutes and drained) to the onions and stir.
