Ingredients

  • 2 slices rustic bread
  • 4 oz salmon fillet
  • 2 tbsp pesto sauce
  • 1/2 cup arugula
  • 1/4 cup sliced tomatoes
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. 1Preheat a grill or grill pan over medium heat.
  2. 2Season the salmon fillet with salt and black pepper.
  3. 3Drizzle olive oil on the grill or grill pan.
  4. 4Place the salmon on the grill and cook for about 4-5 minutes on each side, or until cooked through and flaky.
  5. 5While the salmon is cooking, toast the rustic bread slices on the grill until golden brown.
  6. 6Once the salmon is cooked, remove it from the grill and let it rest for a minute.
  7. 7Spread 1 tablespoon of pesto sauce on each slice of toasted bread.
  8. 8Layer the arugula and sliced tomatoes on one slice of bread.
  9. 9Place the grilled salmon on top of the arugula and tomatoes.
  10. 10Top with the other slice of bread, pesto side down, to form a sandwich.
  11. 11Cut the sandwich in half and serve immediately.

Ingredients

  • 4 cups all-purpose flour
  • 1 1/2 cups warm water (110°F)
  • 2 tsp active dry yeast
  • 2 tsp sugar
  • 2 tsp salt
  • 1/4 cup olive oil
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tsp dried oregano
  • 1/2 tsp black pepper

Instructions

  1. 1In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.
  2. 2In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. 3Mix until a dough forms, then knead on a floured surface for about 10 minutes until smooth and elastic.
  4. 4Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
  5. 5Preheat your oven to 425°F (220°C).
  6. 6Once the dough has risen, punch it down and shape it into a large circle on a parchment-lined baking sheet.
  7. 7In a small bowl, mix together the minced garlic, parsley, oregano, and black pepper. Spread this mixture evenly over the dough.
  8. 8Sprinkle the mozzarella and Parmesan cheese over the top of the dough, pressing it slightly into the surface.
  9. 9Using your fingers, create dimples all over the surface of the dough.
  10. 10Bake in the preheated oven for 20-25 minutes or until golden brown and the cheese is bubbly.
  11. 11Remove from the oven and let it cool slightly before slicing and serving.
