Riced cauliflower has gained popularity as a low-carb alternative to traditional rice, especially among those following ketogenic and paleo diets. While not a traditional Italian dish, it fits well into the Mediterranean diet, emphasizing fresh vegetables and healthy fats. This versatile side can be flavored in various ways, making it a favorite for meal prep and quick weeknight dinners.

Cilantro adds a fresh flavor, while green onions are more economical.
Rinse the cauliflower under cold water and remove the outer leaves.
Trim the stem off the cauliflower and cut it in half to remove the thick core.
Cut the cauliflower into big hearty chunks or quarters.
Grate the cauliflower using a box grater on the large holes until it resembles rice.
If using a food processor, cut the cauliflower into smaller bite-sized pieces and fill the processor halfway with florets.
Pulse the food processor for 20 to 30 seconds until the cauliflower is broken down into rice-sized pieces.
If some pieces don't break down, set them aside for the next batch.
For the third technique, use the grater blade in the food processor to grate the cauliflower into a bowl.
Heat a large sauté pan over medium-high heat and add 1 tablespoon of olive oil.
Add the cauliflower rice to the pan and season with salt, black pepper, and garlic powder.
Stir to mix the seasonings throughout the cauliflower rice.
Cook for about 6 to 8 minutes until the rice is heated through and tender, watching for a slight translucency in color.
