Crack 2 eggs into a bowl.

Add a pinch of salt and a pinch of black pepper to the eggs and mix well.

Chop 20g of green onions and add them to the eggs.

Heat a pan on medium-low heat and add unsalted butter.

Pour the egg mixture into the pan and fry the eggs.

Take 1 tortilla (23cm) and twist it so it doesn't stick.

Flip the tortilla over.

Add mozzarella cheese and spinach on top of the tortilla.

Chop a tomato into thin slices and put some of the tomato slices on top of the spinach.

Add cheese slices and fold the tortilla in half.

Add unsalted butter to the pan if needed and cook until done.

Repeat the same steps for another tortilla, adding 30g bacon crumbles, spinach, and mozzarella cheese.
