Add 1/4 teaspoon of coarse salt and some freshly cracked black pepper to the food processor.

Add 2 cups of fresh basil leaves to the food processor, removing woody stems.

Add about 1/4 cup of olive oil to the food processor.

Add 1/4 cup of pecorino cheese to the food processor (optional).

Process until desired texture is reached, adjusting olive oil for smoothness if needed.

Transfer pesto to a mason jar and refrigerate until ready to use.
