Combine walnuts and spinach in a food processor.

Pulse until finely chopped.

Add vegan cheese, nutritional yeast, lemon juice, salt, and black pepper.

Blend until combined, scraping down the sides as needed.

With the processor running, slowly drizzle in olive oil until smooth.

If the pesto is too thick, add water a tablespoon at a time until desired consistency is reached.

Taste and adjust seasoning if necessary.
