Chocolate Chip Bundt Cake

1½ cup unsalted butter, softened
2 cups sugar
5 large eggs, room temperature
2 3/4 cups all-purpose flour (set 1 tablespoon aside for coating the chocolate chips)
2 teaspoon baking powder
1 teaspoon salt
2 teaspoon lemon zest (optional)
3/4 cup of buttermilk, room temperature
1 tablespoon or (15ml) vanilla extract
1 1/2 cup of mini chocolate chips

Preheat the oven to 350°F (175°C).

Grease and flour a bundt pan, using the reserved tablespoon of flour to coat the chocolate chips.

In a large mixing bowl, cream together the softened unsalted butter and sugar until light and fluffy.

Add the eggs one at a time, mixing well after each addition.

In another bowl, whisk together the flour, baking powder, and salt.

Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk, and mix until just combined.

Stir in the vanilla extract and lemon zest (if using).

Fold in the mini chocolate chips.

Pour the batter into the prepared bundt pan and smooth the top.

Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.

Allow to cool in the pan for 10 minutes before inverting onto a wire rack to cool completely.
