This simple yet flavorful dish is often enjoyed as a snack or appetizer, embodying the Mediterranean spirit with its crispy exterior and soft interior. Today, Socca has gained popularity beyond its regional roots, inspiring variations across the globe, from savory toppings to innovative presentations.

Lentil flour offers a similar texture with added protein.

Avocado oil is healthier while vegetable oil is more affordable.
Measure 1 cup of chickpea flour and add it to a large bowl.
Add 1 cup of water to the bowl with chickpea flour.
Add 1 and 1/2 tablespoons of olive oil and 3/4 teaspoon of salt to the bowl.
Whisk the mixture together until the batter is smooth and runny.
Let the batter rest for about 30 minutes, or up to 24 hours in the fridge if needed.
Preheat the oven to 450°F (232°C) and place a 10-inch cast iron skillet inside to heat up.
After 30 minutes, carefully remove the hot skillet from the oven using oven mitts.
Add about 1/2 tablespoon of olive oil to the skillet and swirl it around to coat the pan.
Pour the batter into the hot skillet and return it to the oven to bake for about 20 minutes.
Optionally, turn on the oven's broiler for the last 1 to 2 minutes to brown the top.
Once done, the Socca should lift easily from the pan and is ready to be sliced.
