Sprinkle 200 g of chanterelles with a few tablespoons of flour and coat thoroughly in flour.

Soak the chanterelles in hot water and rinse in a strainer to remove dirt.

Finely chop the onion.

Grate 40 g of Parmesan cheese.

Heat a few tablespoons of olive oil in a pan.

Add the chopped onion and fry until translucent.

Add 2 cloves of garlic and fry together with the onion.

Add ¾ cup of rice to the pan and fry for a short time.

Pour in 100 ml of dry white wine and cook until the alcohol evaporates.

Add the chanterelles to the pan and fry them briefly.

Add the first portion of broth, approximately 150 ml.

When most of the liquid has evaporated, add another portion of broth.

Stir the risotto constantly while adding broth in portions until the rice is al dente, using approximately 700 ml of broth in total.

Finally, add 1 tablespoon of butter and the grated Parmesan cheese.

Season with salt and pepper, if desired.
