Mention that seasoned rice is a one pot meal where you can add various ingredients.
Show leftover ackee and saltfish from the previous day to use in the recipe.
State that the rice will include pumpkin and seasonings, and show the ingredients: scallions, onion, garlic, ginger, scotch bonnet pepper, thyme, rice (half basmati and half long grain), coconut milk, brown sugar, Maggie all-purpose seasoning, and Grace soup mix.
Add about a cup of water to the pot and half a block of coconut milk, along with a cup of coconut milk and a little bit of water.
Add diced pumpkin (about a cup) to the pot and let it cook for 5-10 minutes to soften.
Add scotch bonnet pepper, salt, and black pepper to taste, and emphasize tasting the pot along the way.
Once the pumpkin is softened, add more coconut milk and the previously cut seasonings (onion, tomatoes, scallions).
Add about a tablespoon of Maggie all-purpose seasoning and another tablespoon of Grace soup mix.
Mention that the soup mix is optional and can be strained off if desired.
Add garlic powder and green seasoning (which includes blended ingredients like thyme, pimento, ginger, garlic, onion, and scallion).
Let the mixture boil for another 5-10 minutes until the color is nice and yellow from the pumpkin.
Add 2 cups of rice to the pot and mention that the rice will absorb moisture, and it should be a little sticky but not too much.
Let the rice boil for about 10 minutes, then add the ackee from the day before.
Taste the mixture to ensure the seasoning is right, and mention that you can add shrimp if desired.
Saute shrimp separately and add it to the pot with the ackee, but do not mix too much with the spoon.
Shift the rice from side to side to evenly distribute ingredients.
