The Instant Pot revolutionizes this classic by significantly reducing cooking time while maintaining rich flavors. Today, pot roast is a beloved staple across the country, with variations influenced by regional ingredients and preferences.

Start with 3 pounds of pork (two loins tied together).
Rub dried spices (harissa, chili powder, or paprika) all over the pork on all sides.
Place a trivet in the Instant Pot and add 1 cup of water to pressurize.
Place the pork directly on top of the trivet.
Create a foil packet and add red baby potatoes inside.
Chop off the top of a garlic bulb, drizzle with olive oil, and add it to the foil packet.
Fold up the foil packet and place it in the Instant Pot with the pork.
Close the lid, ensure the silicone ring is on, and set to sealing.
Cook at high pressure for 25 minutes.
Allow 15 minutes of natural pressure release, then perform a quick release.
Open the lid and check the internal temperature of the pork.
Remove everything from the Instant Pot and prepare the sauce by melting honey in the microwave and mixing it with soy sauce.
Squeeze out the roasted garlic from the bulb into the sauce mixture and mix well.
Apply the sauce all over both sides of the pork.
Place the pork and potatoes in an air fryer for a few minutes to crisp them up.
Spray the potatoes with olive oil and season with salt and fresh cracked black pepper.
Air fry for about 5 minutes, then apply another layer of sauce.
Pop it back in the air fryer for a couple more minutes.
Slice the pork and serve with the potatoes, garnished with fresh parsley.
