Instant Pot Pot Roast

Cultural Context

Pot roast has its roots in American home cooking, often associated with Sunday family dinners. This comforting dish showcases the use of tougher cuts of beef, which become tender through slow cooking. The Instant Pot revolutionizes this classic by significantly reducing cooking time while maintaining rich flavors. Today, pot roast is a beloved staple across the country, with variations influenced by regional ingredients and preferences.

1

In a small bowl, combine seasoning salt, garlic powder, dried parsley, onion powder, and black pepper. Sprinkle over the roast to season.

2

Turn Instant Pot to sauté. When it reads hot, add canola oil and sear the roast on all sides for 2-3 minutes per side. Remove the meat from the Instant Pot after browning.

3

Add chopped onion to the pot and cook until softened, adding more oil if necessary. Add minced garlic and cook for 1 minute.

4

Add beef broth, balsamic vinegar, tomato paste, and Worcestershire sauce to the pot. Scrape any brown bits from the bottom with a wooden spoon to prevent a burn message. Stir to combine.

5

Return the seared meat to the pot. Put the lid on, turn the valve to sealing, and select Manual or Pressure Cook for 65 minutes on high pressure.

6

Once the cook time is over, turn the Instant Pot off and let the pressure release naturally for 10-15 minutes before venting and opening the lid.

7

Remove the roast to a plate, cover, and let rest for 10 minutes. Add whole potatoes and thickly sliced carrots to the pot, cover, and cook on Manual or Pressure Cook for 3 minutes.

8

While the potatoes and carrots cook, shred the beef and keep warm.

9

After the cook time, let pressure release naturally for 5 minutes before venting and opening the lid.

10

Remove potatoes and carrots from the pot and place on a platter with the beef.

11

Stir in ketchup for brightness. Whisk together corn starch and water, then stir into the gravy.

12

Turn Instant Pot to sauté and cook, stirring often, until gravy has thickened. Serve with roast beef and vegetables.
