Heat olive oil in a large pot over medium heat until shimmering.

Add chopped onion and sauté until translucent, about 5 minutes.

Stir in minced garlic and cook for another minute until fragrant.

Add diced carrot and potato, cooking for 5-7 minutes until slightly softened.

Incorporate sauerkraut, stirring to combine with the vegetables.

Pour in vegetable broth and add bay leaves, black pepper, and salt.

Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.

Slice smoked sausage and add it to the pot, simmering for an additional 10 minutes.

Stir in dill and caraway seeds, adjusting seasoning to taste.

Remove bay leaves before serving.

Garnish with fresh parsley and serve hot.
