Traditionally served as a snack or appetizer, these flavorful potato cakes reflect the country's rich culinary heritage. Today, Maakouda can be found in various forms across North Africa and has gained popularity in Mediterranean cuisine as well.

Steam the potatoes for about 15-20 minutes until cooked.
Transfer the cooked potatoes to a bowl and mash until super smooth, with no lumps.
Add minced garlic, chopped parsley, salt, cumin, paprika, black pepper, and the beaten egg to the mashed potatoes.
Mix all the ingredients together using a fork until well combined.
Grab a small amount of the mixture, roll it into a ball, and flatten it to form patties, placing them on a tray.
Let the patties cool completely before frying them.
In a mixing bowl, combine flour with spices (salt, turmeric, paprika, black pepper, baking powder, and yeast).
Slowly add water to the flour mixture until it reaches a consistency that is not too thin or too thick.
Let the batter sit for 10 minutes to rest.
Heat vegetable oil in a frying pan over medium heat.
Dip each patty into the batter, allowing excess to drip off, and carefully place it in the hot oil.
Fry the patties until golden brown and crispy, ensuring the oil is not too hot to prevent the insides from being raw.
Remove the fried patties from the oil and drain on paper towels.
