Cut cabbage into wedges.
Add 1 tbsp pepper mix, 1 tbsp cumin seeds, and 3 bay leaves to a large pot.
Pour in 6 cups of water and add 2 tbsp salt and 1 tbsp sugar; mix well.
Simmer the mixture for 10 minutes.
Remove from heat and let cool down.
Chop 1 bunch of celery (1 lb).
Chop 4 oz of parsley.
Add 21 oz of sliced raw beetroot to the mixture.
Season with 1 tbsp Korean red chilli flakes, or chilli pepper or cayenne pepper; mix well.
Transfer half of the vegetable mix into a pan.
Arrange cabbage wedges on top.
Add the remaining vegetable mix and cabbage wedges on top.
Pour the brine over the vegetables.
Use a weight to keep the content submerged in the liquid.
Put the lid on the container loosely so that gases can escape.
Leave to ferment at room temperature for 7-10 days.
Store cabbage in an airtight container in the refrigerator.
