12 anchovies (one small tin)
20 black pitted olives
1 cup dry white wine
400g can of cherry or crushed tomatoes

Boil a large pot of water. Once boiling, add salt (should taste almost as salty as sea water).

Remove the stalk from the chili, slice in half, scrape out the seeds and chop finely. Peel and slice the garlic very finely. Pit the olives using a pitter (if required) – Set aside.

Add a generous amount of olive oil to a frying pan on high heat. Add the chopped garlic and chili and fry gently. Add the dried oregano and the anchovies. Use a wooden spoon to crush them in the pan, they will dissolve in the sauce. Add the pitted black olives. Deglaze with the white wine. Flambé only if safe by lightly tilting the pan. Leave to reduce a little.

While it’s reducing, grate your Pecorino cheese and add to the pan liquid. Mix well. Add the canned cherry tomatoes or puree. Turn heat to low and leave to simmer, mixing every 30 seconds.

While the sauce is reducing, add the pasta to your boiling salted pasta water and cook al dente, approx. 2-3 minutes. Always taste to be sure.

Once pasta is cooked, drain and transfer directly into the pan, mix well into the sauce. Add chopped parsley and serve immediately on heated plates.
