Instructions

  1. 1Heat olive oil in a skillet over medium heat until shimmering.
  2. 2Season chicken thighs with salt and black pepper.
  3. 3Sear chicken thighs in the skillet until golden brown on both sides, about 4-5 minutes per side.
  4. 4Remove chicken from skillet and place in the slow cooker.
  5. 5Add chopped onion, garlic, carrots, and celery to the skillet; sauté until softened, about 3-4 minutes.
  6. 6Add lemon juice and scrape up any browned bits from the skillet.

  6. 6Cover the slow cooker and cook on low for 4-5 hours or on high for 2-3 hours, until the salmon is cooked through and flakes easily with a fork.
