Croissant Loaf

Cultural Context

The Croissant Loaf is a delightful twist on the classic French croissant, merging the flaky pastry with a custard-like filling. Traditionally enjoyed as a breakfast or brunch item, this dish reflects the French penchant for rich, buttery flavors. In modern times, variations have emerged globally, often incorporating different fillings and toppings, making it a versatile treat for any occasion.

Servings4
168 ml (6 fl. oz) warm water
168 ml (6 fl. oz) warm milk
600 g (21 oz) flour
10 g (0.3 oz) salt
62 g (2.1 oz) sugar
45 g (1.6 oz) melted butter
12 g (0.4 oz) dry yeast
336 g (12 oz) butter
1

Combine warm water, warm milk, flour, salt, sugar, and melted butter together.

2

Work the mixture with dough hooks for 5-7 minutes until very smooth and slightly sticky.

3

Set the dough aside for 1 hour, covered in plastic.

4

Roll out the butter block into a 16x16 cm square.

5

Roll out the dough into a 25x25 cm square. Place the butter block on top of the dough and gather the edges of the dough together to cover the butter completely.

6

Roll out the dough into a 50 cm long rectangle. Fold it as shown in the video, wrap in plastic, and set aside for 30 minutes. Repeat this procedure 2 more times, then wrap the dough in plastic and let sit in the fridge overnight.

7

The next day, roll out the dough slightly, cut it in half, and roll each half into a 25x30 cm rectangle.

8

Slice each rectangle into quarters and roll each quarter into a 'snail'.

9

Place the dough rolls seam side down into a prepared 22x10 cm baking pan.

10

Brush with egg wash and set aside for 1-2 hours.

11

Brush with more egg wash and bake at 190C/375F for 30-35 minutes.
