2 tablespoons creole seasoning
1/4 cup olive oil
1/2 cup diced onion
1/2 cup celery, diced
1/2 cup carrot, diced
1 cup blackeyed peas, cooked
3 cloves garlic, minced
1 tablespoon fresh thyme, chopped
1/4 cup flat leaf parsley, chopped
2 tablespoons cane vinegar
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons fresh lemon juice

Introduce the black grouper, a mild white fleshed fish from the Gulf of Mexico.

Prepare creole seasoning and rub it liberally on both sides of the grouper fillet.

Heat a black cast iron skillet until it shimmers and shows a bit of smoke, then add olive oil.

Place the seasoned grouper fillet in the hot skillet to sear, cooking for about 1 minute on the first side until a crust forms.
