3/4 cup sugar (150g)
Zest of 1 whole lemon (about 1 to 2 tbsps)
1/2 cup butter (softened) (115g)
2 eggs
2 and ¼ cups all purpose flour (280g)
1/2 tsp baking powder (2g)
1/2 tsp baking soda (2g)
1/4 cup fresh lemon juice (60ml)

Rub sugar and lemon zest together to release lemon oil.

Add butter and mix until light and fluffy.

Add eggs one at a time, mixing after every addition.

Sift together flour, baking soda, and baking powder into the mixture.

Mix gently with spatula. Then lastly, add the fresh lemon juice.

Cover and let it sit in freezer for 30 minutes.

Scoop about a tablespoon or a tablespoon and a half per cookie (35g each).

Dredge in granulated sugar and icing sugar.

Place on a lined baking sheet.

Bake in a preheated oven at 170C or 350F for 10-12 minutes.
