Cut the potatoes in half.
Chunk up the smoked sausage into 2 to 3-inch pieces.
Rinse the sauerkraut in a colander with water and drain it to reduce the brine flavor.
Add the rinsed sauerkraut to the slow cooker.
Pour in the beer or chicken stock as the cooking liquid.
Add the chopped onion to the slow cooker.
Add a little brown sugar or honey to tame the sourness of the sauerkraut.
Chop the apples and add them to the slow cooker without peeling them.
Optionally, add cooked crumbled bacon to the mixture.
Sprinkle in some caraway seeds for flavor.
Cook on high for a couple of hours or on low for 3 to 4 hours until fragrant.
