Choose a ripe breadfruit that feels firm and light in weight.
Cut off the stem of the breadfruit and create a flat surface.
Cut the breadfruit into wedges and remove the core with a paring knife.
Peel the skin off the breadfruit.
In a large pot, add the breadfruit, 1 tablespoon of Caribbean green seasoning, Scotch bonnet pepper, smashed garlic, and salt.
Pour in 1 can of coconut milk and cover with water.
Bring the pot to a boil and let it boil for 35 minutes, checking for tenderness with a paring knife.
Drain the breadfruit and allow it to cool slightly before cutting it into pieces.
In a skillet, melt 3 tablespoons of salted butter over medium-low heat.
Add chopped onion, garlic, Scotch bonnet pepper, and seasoning pepper to the skillet and cook until soft.
Add the boiled breadfruit pieces to the skillet and toss to combine with the onion mixture.
If desired, increase the heat to form a crust on the breadfruit.
Serve with chopped parsley on top.
