Trim excess skin and sinew from the chicken thighs, make cuts in the thick parts for even cooking, poke holes in the skin with a fork, and cut in half.

Sprinkle sake, salt, pepper, and coriander powder on both sides of the chicken. Prepare the sauce mixture [A] by combining fish sauce, soy sauce, mirin, and coriander powder.

Crush the peanuts in a bag. Chop the fresh cilantro into 2-3 cm pieces. Cut the lemon into thin half-moon slices.

Heat oil in a frying pan over medium heat and place the chicken skin-side down. Press down with a spatula while cooking until a nice crispy brown crust forms, then flip and cook for 6 minutes on medium heat.
