Remove the stem from the kiwi.
Peel the kiwi fruits with a paring knife.
Cut the kiwi into 1/2-inch pieces.
Place 2 cups of the kiwi pieces in a medium saucepan and reserve 1 cup for fresh kiwi puree.
Add sugar and lemon juice to the saucepan.
Heat the mixture over medium-high heat, stirring until the sugar is dissolved and the mixture comes to a boil.
Once boiling, reduce the heat to maintain a fast simmer and cook for about 10-12 minutes until the juices have thickened and the kiwi is soft.
Turn off the heat and coarsely mash the mixture with a potato masher or fork.
Transfer the compote to a bowl and cool to room temperature, or cool quickly over a bowl of iced water.
Place the reserved kiwi pieces in a food processor and process until pureed.
Once the compote is cool to the touch, add the fresh kiwi puree and stir it in.
