Transfer the chicken breasts to a cutting board and cover with clear wrap.
Use a meat hammer to press down the chicken to level it.
In a bowl, add garlic powder, thyme, onion powder, smoked paprika, chicken bouillon, salt, and black pepper; mix together.
Transfer the chicken to an oven-safe dish.
Drizzle oil over the chicken to prevent it from drying out in the oven.
Sprinkle the mixed spices over the chicken and rub them in well on both sides.
Cover the chicken and marinate for at least 30 minutes, or refrigerate for longer.
Preheat the oven to 425°F.
In a pot, add water and season it; bring to a boil.
Add coconut oil to the boiling water.
Turn off the heat and add the couscous, stirring to combine; cover and let sit for 4-5 minutes.
Fluff the couscous with a fork to separate it after soaking.
In another pot, heat coconut oil and add diced onions; fry until translucent.
Add garlic and ginger, then stir.
Add diced carrots and cook until slightly soft.
Grate in black pepper and salt; stir to combine.
Add bell peppers and stir, cooking for just 1 minute to avoid overcooking.
Add the fluffed couscous and stir to combine everything together.
Add spring onions and stir; taste and adjust seasoning if needed.
After 15 minutes of baking, flip the chicken to the other side and return to the oven for another 10-15 minutes until cooked through.
