½ c medjool dates (120g)
2 Tbsp coconut oil (45ml) melted

1/2 tsp Cinnamon
2 tbsp Butter
2 tbsp Maple Syrup

Add all ingredients for the pecan pie crust to a food processor and process until well combined and a sticky crust forms. Press into an even layer in a pie pan. Set in the freezer while making the next layer.

Add butter to a large pan over medium high heat. When melted, add your cinnamon and apples, stir until apples are evenly coated. Add water and cook apples until softened. When water is evaporated, add maple syrup and apple butter (optional). Stir until apples are evenly coated and the mixture becomes slightly sticky. Add in an even layer on top of chilled pie. Set in the freezer while making the next layer.

Working quickly, add maple syrup and vanilla extract and stir for 30-60 seconds just until mixture becomes sticky then add to the top of the pie and quickly spread it out into an even layer before it hardens.
