Candied Cherries

Cultural Context

Candied cherries, often referred to as glacé or maraschino cherries, have a rich history in American desserts, commonly used as toppings for cakes, ice cream, and cocktails. They are made by soaking cherries in a sugar syrup, preserving their sweetness and vibrant color. These cherries evoke nostalgia and are a staple in festive treats, particularly during holidays and celebrations. Today, they are enjoyed worldwide, with variations that include different flavorings and colors.

1

Strain the maraschino cherries and remove the stems.

2

Measure out 3/4 cup of sugar and set aside 1/4 cup of the cherry juice.

3

In a saucepan with a lid, combine the cherry juice and sugar.

4

Heat the mixture for 2-3 minutes until the sugar is mostly dissolved and the mixture is liquidy.

5

Add the cherries to the saucepan and stir well.

6

Bring the mixture to a boil, then reduce the heat to a simmer and cover.

7

Stir the cherries every 10 minutes for 45-55 minutes until the syrup thickens to a softball stage (235°F).

8

Check the temperature with a candy thermometer to ensure it reaches 235°F.

9

Once at temperature, remove the saucepan from heat and let the mixture cool to room temperature.

10

Use a slotted spoon to strain the cherries from the syrup, breaking them apart if they are stuck together.

11

Store the cherries in an airtight container in the refrigerator for up to six months.
