Instructions
- 1Slice eggplant into rounds and sprinkle with salt; let sit for 30 minutes to draw out moisture.
- 2Rinse eggplant slices under cold water and pat dry with a paper towel.
- 3Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with garlic powder, oregano, and black pepper.
- 4Dredge each eggplant slice in flour, dip in eggs, then coat with breadcrumb mixture.
- 5Heat olive oil in a large skillet over medium heat; pan-fry eggplant slices until golden brown, about 3-4 minutes per side.
- 6Transfer fried eggplant to a paper towel-lined plate to drain excess oil.
- 7Preheat oven to 375°F (190°C).
- 8In a baking dish, spread a thin layer of marinara sauce on the bottom.
- 9Layer half of the fried eggplant slices in the baking dish; top with half of the marinara sauce, half of the mozzarella, and half of the parmesan cheese.
- 10Repeat layers with remaining ingredients, finishing with a layer of cheese on top.
- 11Bake in preheated oven for 25-30 minutes until cheese is bubbly and golden.
- 12Remove from oven and let cool for 5 minutes before serving.
- 13Garnish with fresh basil and serve with extra marinara sauce on the side.
