1

Cut onion into slices and roughly chop a handful of garlic.

2

Cut bell pepper into pieces, removing the seeds for less spiciness.

3

Rinse Thai basil leaves with water and remove them from the stem.

4

Cut chicken thighs into four pieces; if using chicken breast, cut smaller.

5

Marinate chicken with soy sauce, dark soy sauce, sugar, white pepper powder, corn starch, and rice wine; mix and let marinate for 10 to 15 minutes.

6

Heat sesame oil in a hot pan over medium heat.

7

Add ginger slices to the hot sesame oil and let them sizzle for about 1 minute.

8

Add the marinated chicken to the pan and pan-fry both sides until golden brown.

9

Add garlic and bell pepper to the pan and stir-fry with the chicken for about 1 minute.

10

Season with soy sauce, dark soy sauce, and sugar; mix everything evenly.

11

Add a substantial amount of rice wine; if you cannot use wine, substitute with water.

12

Cook the chicken until the sauce boils vigorously to cook off the alcohol.

13

Cover the pan with a lid and cook for another 1 minute to ensure the chicken is cooked through.

14

Remove the cover, turn off the heat, and add the Thai basil leaves; mix together.
