1 whole chicken, cut into 4 pieces, skin on
1/2 cup Vegetable oil
2 carrots, cut into a julienne
1 tablespoon Garlic finely chopped
1/4 cup of raisins
1 onion, sliced
1 &1/2 tablespoon tomato paste
2 large tomatoes pureed
3 cups basmati rice (long grain), washed and drained
4 cups of hot water
4-5 green chili peppers
1&1/2 tsp cumin powder
Salt and pepper, to taste
Bay leaves 2
Cinnamon stick-2 small pieces
Cloves-4-5

Heat a pan and add oil.

Fry carrots for about 3-5 minutes, then add raisins, fry for 2-3 minutes – remove, drain and set aside.

Add sliced onions and fry until golden.

Add garlic, sauté for 1-2 minutes.

Add whole spices and tomato paste, salt.

Add the chicken, fry for 3-4 minutes until slightly golden.

Pour pureed tomatoes and leave to simmer and reduce for 10-15 minutes.

Remove the chicken and place it in the oven or air fryer for 6-8 minutes to completely golden.

Add 3 cups of basmati rice.

Add 4 cups of hot water and cook for 10 minutes over medium heat.

After 10 minutes, open the lid and add half of the fried carrots and raisins.

Cook covered for another 20-25 minutes over low heat or until the water is absorbed and rice is perfectly cooked.
