Trim the tops and roots of the beets, leaving a small amount of stem.
Run beets under cold water and scrub the outside with your thumb.
Add a couple of inches of water to the bottom of the pot and bring to a boil.
Reduce to a strong simmer and place the steamer basket in the pot.
Lay the beets in the steamer basket with skins on and cover with a lid.
Set a timer for 30 minutes to steam the beets.
Check doneness by piercing with a knife; it should slide in easily.
Let the beets sit in the pot for about 5 minutes after cooking.
Rinse the beets under cool water to help peel the skins off easily.
Cut the beets into chunky bite-sized pieces and transfer to an airtight container.
Toss the beets with olive oil, cherry vinegar, salt, black pepper, and fresh dill before serving.
