Fisherman’s Pie

1 cup cream of shrimp
2 pounds mashed potatoes

Preheat the oven to 345°F.

Place tilapia in a casserole dish, folding each piece for better fitting.

Season the tilapia with 1.5 teaspoons of salt, 1 teaspoon of black pepper, and parsley on top.

Pour 3/4 cup of white wine over the fish.

Cover the casserole and bake in the oven for 15 minutes.

While the fish is baking, sauté 1/2 cup of leeks and 1 pound of mushrooms in a pan with 1 teaspoon of salt for about 5 minutes until softened.

In another pot, cook 1 pound of shrimp for about 1 minute until they change color, to reduce water release during baking.

After 15 minutes, remove the fish from the oven and check for doneness.

Mix the cooked shrimp with the sautéed mushrooms and leeks, and add about 1 cup of the fish juices from the casserole.

Spoon the shrimp and mushroom mixture over the fish in the casserole.

Increase the oven temperature to 425°F and return the casserole to the oven for an additional 20 minutes.

After 20 minutes, remove from the oven and top with 2 pounds of prepared mashed potatoes, spreading them over the filling.

Return the casserole to the oven for a few minutes to warm the mashed potatoes before serving.
