Preheat the oven (or toaster oven) to 350°F.

Pour a bit of enchilada sauce into the bottom of a casserole dish to coat it.

Take the first corn tortilla, coat it in enchilada sauce on both sides, and lay it in the casserole dish.

Repeat the process for the next three tortillas, creating a base layer of four tortillas.

Add a layer of olives, green chili peppers, shallots, and a handful of cheese on top of the tortillas.

Repeat the layering process two more times, using four tortillas each time and adding olives, green chili peppers, shallots, and cheese in between layers.

Pour any remaining enchilada sauce over the top layer.

Add more olives, green chili peppers, shallots, and a generous amount of cheese on the final layer.

Place the casserole in the oven and bake for 20 minutes.

Remove the casserole from the oven and let it rest for a few minutes before serving.

Optionally, garnish with cilantro or parsley before serving.
