1 pound ground turkey or ground beef
1 can tomato sauce
1 cup chopped onion
1 red chopped pepper
1 yellow chopped pepper
1 cup roma tomato
1 tsp minced garlic
1 tsp black pepper
1/2 tsp salt
1 tsp cumin
1 tsp oregano
1 tsp paprika
1 tsp garlic powder
1 tsp olive oil
8 corn tortillas
1 1/2 cups cheddar cheese

Preheat the oven to 350°F (175°C).

In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.

Add the diced onion, garlic powder, cumin, salt, and black pepper to the skillet. Cook until the onion is translucent.

Stir in the black beans, corn, and half of the enchilada sauce. Mix well and remove from heat.

In a 9x13 inch baking dish, spread a thin layer of the remaining enchilada sauce on the bottom.

Layer 4 corn tortillas over the sauce, followed by half of the beef mixture and a third of the cheese.

Repeat the layers: tortillas, beef mixture, and cheese. Finish with a final layer of tortillas and the remaining enchilada sauce on top.

Sprinkle the remaining cheese over the top layer.

Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

Let the casserole cool for a few minutes before serving. Garnish with chopped cilantro if desired.
