  • 1 cup corn kernels, frozen or canned
  • 2 cups shredded cheddar cheese
  • 12 corn tortillas
  • 1/2 cup diced onion
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. 1Preheat the oven to 350°F (175°C).
  2. 2In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  3. 3Add the diced onion, garlic powder, cumin, salt, and black pepper to the skillet. Cook until the onion is translucent.
  4. 4Stir in the black beans, corn, and half of the enchilada sauce. Mix well and remove from heat.
  5. 5In a 9x13 inch baking dish, spread a thin layer of the remaining enchilada sauce on the bottom.
  6. 6Layer 4 corn tortillas over the sauce, followed by half of the beef mixture and a third of the cheese.
  7. 7Repeat the layers: tortillas, beef mixture, and cheese. Finish with a final layer of tortillas and the remaining enchilada sauce on top.
  8. 8Sprinkle the remaining cheese over the top layer.
  9. 9Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  10. 10Let the casserole cool for a few minutes before serving. Garnish with chopped cilantro if desired.
