- ●1 can (15 oz) black beans, drained and rinsed
- ●1 can (10 oz) enchilada sauce
- ●1 cup corn kernels, frozen or canned
- ●2 cups shredded cheddar cheese
- ●12 corn tortillas
- ●1/2 cup diced onion
- ●1 tsp garlic powder
- ●1 tsp cumin
- ●1/2 tsp salt
- ●1/2 tsp black pepper
- ●1/4 cup chopped fresh cilantro (optional)
Instructions
- 1Preheat the oven to 350°F (175°C).
- 2In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- 3Add the diced onion, garlic powder, cumin, salt, and black pepper to the skillet. Cook until the onion is translucent.
- 4Stir in the black beans, corn, and half of the enchilada sauce. Mix well and remove from heat.
- 5In a 9x13 inch baking dish, spread a thin layer of the remaining enchilada sauce on the bottom.
- 6Layer 4 corn tortillas over the sauce, followed by half of the beef mixture and a third of the cheese.
- 7Repeat the layers: tortillas, beef mixture, and cheese. Finish with a final layer of tortillas and the remaining enchilada sauce on top.
- 8Sprinkle the remaining cheese over the top layer.
- 9Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
- 10Let the casserole cool for a few minutes before serving. Garnish with chopped cilantro if desired.
