Enchilada Casserole

Cut up half of a bell pepper.

Chop 2 cloves of garlic.

Chop an onion.

Brown the ground beef in a 12-inch cast iron skillet, breaking it up as it cooks.

Add the chopped onions, bell peppers, and garlic to the browned beef and let it cook until the vegetables are soft.

Add 2/3 cup of water and taco seasoning to the meat mixture and stir well, letting it cook together for a few minutes.

Start layering the enchiladas by adding a bit of enchilada sauce to the bottom of the skillet.

Place a layer of corn tortillas over the sauce.

Add a layer of the meat mixture on top of the tortillas.

Add a layer of enchilada sauce over the meat.

Sprinkle cheese on top of the meat layer.

Add another layer of meat and a bit of cilantro on top.

Bake in the oven at 350°F for about 15 minutes.

Broil for about 3 minutes to brown the top.
