2.25 pounds ground beef
Pillsbury flaky layer biscuits (buttermilk flavor)
Old El Paso red enchilada sauce (medium)
Taco seasoning (from Gordon Foods)

Preheat the oven to 350°F.

Heat a frying pan over medium heat and add 2.25 pounds of ground beef.

Chop and add onions to the ground beef in the pan.

Break up the ground beef as it cooks to ensure even cooking.

While the oven is heating and the beef is cooking, open the Pillsbury flaky layer biscuits and cut each biscuit into quarters.

Place the biscuit pieces into a large bowl.

Check on the ground beef to ensure it is browning evenly.

Add two cans of Old El Paso red enchilada sauce to the bowl with the biscuit pieces and mix to coat them.

Once the beef is browned, add taco seasoning to the meat and mix well.

Add a little water to the beef mixture to help the seasoning blend and thicken.

Transfer the biscuit and enchilada sauce mixture into a baking pan, spreading it evenly.

Spread the cooked ground beef mixture over the biscuit mixture in the pan.

Top with finely shredded mild cheddar cheese.
