In a large bowl, combine 3.5 cups of all-purpose flour and 1.5 teaspoons of kosher salt.
Add 2 tablespoons of granulated sugar to the flour mixture and mix together.
Take 1.5 sticks of unsalted butter, freeze half, and grate the frozen half into the flour mixture using a box grater.
Toss the grated butter in the flour mixture to coat it.
Slice the remaining half stick of butter into thin pieces and toss them in the flour mixture to coat.
Add ice water starting with 1/2 cup, mixing until the dough holds together without overworking it.
Transfer the dough to a work surface, adding more water as needed to bring it together without making it too wet.
