Start with 3 cups of calrose rice and 4 cups of water.

Add a pinch of salt and stir to coat the rice with water.

Turn heat to high and wait for the water to start bubbling.

Once bubbling, stir again and cover with a lid, then reduce heat to low and let simmer for 20 minutes.

After 20 minutes, remove from heat and let sit with the lid on for an additional 20 minutes.

Remove the lid and fluff the rice, separating the granules as much as possible.

Transfer the rice to a larger container and refrigerate overnight to dehydrate.

To make garlic butter, mix a stick of room temperature butter with minced garlic, a squeeze of lemon juice, and a little soy sauce.

The next day, dice onion, carrot, and green onion.

To finish, heat oil over high heat in a large cooking vessel (a wok is ideal).

Add the refrigerated rice and toss to heat it in the oil.

Once heated, add the garlic butter and stir to coat the rice.

Add the sautéed vegetables, diced chicken, and scrambled eggs, and stir to incorporate all ingredients.

Season with soy sauce, salt, and pepper to taste, stirring well to combine.
