Coconut-Rum Banana Bread

3 ripe bananas, mashed
1/3 cup melted coconut oil
1/2 cup sugar
1 large egg, beaten
1 teaspoon vanilla extract
1 teaspoon baking soda
1/4 teaspoon salt
1 cup all-purpose flour
1/4 cup dark rum
1/2 cup shredded coconut

Preheat your oven to 350°F (175°C).

In a mixing bowl, combine the mashed bananas and melted coconut oil until well mixed.

Stir in the sugar, beaten egg, and vanilla extract until fully incorporated.

Sprinkle the baking soda and salt over the mixture and mix well.

Gradually add the flour, stirring until just combined. Do not overmix.

Fold in the dark rum and shredded coconut gently into the batter.

Pour the batter into a greased loaf pan.

Bake in the preheated oven for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
