Mediterranean Grain Bowl

1.5 tbsp tahini
2 tbsp nutritional yeast
1 tbsp lemon juice
maple syrup
salt
water

Start with a frozen rice medley as the base for the grain bowl.

If making rice from scratch, use a rice cooker.

For the Mediterranean grain bowl, marinate tofu to enhance flavor.

Combine 3 tbsp soy sauce, 2 tbsp lemon juice, 2 tsp olive oil, garlic powder, 1/2 tsp dried thyme, chopped sage, and black pepper for the marinade.

Drain and slice half of the Trader Joe's high protein tofu into thin pieces for better marination.

Place tofu in the marinade, ensuring it's coated and let it marinate in the fridge for about 20 minutes.

Chop vegetables, using between 1/4 and 1/2 cup of your choice, along with fresh mint and parsley.

Make a tahini dressing by mixing 1.5 tbsp tahini, 2 tbsp nutritional yeast, 1 tbsp lemon juice, minced garlic, maple syrup to taste, salt, and water to achieve desired consistency.

Pan fry the marinated tofu slices on medium heat for 2-3 minutes on each side until browned.
