Season the inside of the chicken with a few pinches of salt and pepper, being careful not to overdo the salt.

Generously season the outside of the chicken with salt and pepper.

Prepare a roasting pan by adding 1-2 tablespoons of sunflower oil at the bottom.

Place the chicken in the roasting pan, ensuring it is sitting in the oil.
