Make simple syrup by combining 1/2 cup sugar and 1/2 cup water in a pot and bringing it to a boil; let it cool.
In a food processor, combine 1 cup almond flour, 1 stick of softened butter, 1/3 cup sugar, 2 egg yolks, and 1 teaspoon almond extract; process for about 30 seconds until smooth.
Slice stale brioche into thick slices, about 1/2 inch to 3/4 inch thick; use one piece per person.
Brush the top of each brioche slice with the cooled simple syrup.
Spread a spoonful of your favorite jam on each slice of brioche.
Spread a layer of almond cream over the jam, ensuring the jam is still visible.
Preheat the oven to 375ยฐF (190ยฐC).
Place the prepared brioche slices on a baking sheet.
Bake in the preheated oven for 5-10 minutes until brown and bubbly; keep an eye on it.
Remove from the oven, dust with powdered sugar, and garnish with toasted almonds and fresh berries.
