Stuffed Zucchini with Beef and Veggies

1 cup carrots, diced
1 teaspoon chili flakes
1 lb ground beef
1 cup mozzarella, shredded
1 cup mushrooms, chopped
1 teaspoon pepper
1 medium red onion, diced
2 cups tomato sauce
2 tablespoons vegetable oil
4 medium zucchini

Preheat the oven to 360°F/180°C.

Heat a skillet over medium heat and add the shredded carrot. Cook it for about 1 minute, spreading it evenly in the pan.

Add onion and mushrooms and cook everything for 1 more minute.

Add the ground beef and cook it for another 5 minutes, until slightly brown.

Pour the tomato sauce, reduce the heat, and continue cooking for 5 more minutes.

Slice the zucchini and scoop their inside.

Fill them with the beef and veggie mixture.

Shred the mozzarella on top of the zucchinis, and season them with pepper and chili flakes.

Bake them for the next 25 minutes.
