Let the pizza dough sit out for 60 minutes before using.
Grease a 16x12 aluminum pan with about 1/4 cup olive oil.
Press the dough into the pan, trying to equalize the thickness.
Cover the dough with plastic wrap and let it rest for 45 minutes, then stretch it again if needed, possibly repeating this for up to 3 intervals of 45 minutes.
Prepare the chicken cutlets by cutting them into cubes or strips.
After resting, check the dough for air bubbles and press them out if necessary.
Layer the sliced mozzarella cheese evenly across the bottom of the pan, leaving about 1/4 inch on the sides.
Add the cubed chicken on top of the mozzarella cheese.
Spread a thin layer of crushed tomatoes over the chicken, being careful not to add too much sauce.
Preheat the oven to 440°F, adjusting if necessary based on your oven.
Sprinkle a little grated mozzarella on top of the sauce.
Drizzle garlic oil over the top of the pizza.
Bake in the oven for 18 to 22 minutes, checking the bottom for crispness.
At the 8 to 9 minute mark, rotate the pizza in the oven to ensure even cooking.
After 20 minutes, remove the pizza and sprinkle on grated Parmesano Reggiano and oregano.
Return the pizza to the oven for an additional 3 minutes, or until the cheese is melted and bubbly.
Finish under the broiler for about 30 seconds to achieve a golden color.
Let the pizza cool slightly before cutting into squares.
