Preheat the oven to 450°F (232°C).
Pour 2 tablespoons of canola oil into a cast iron skillet and place it in the oven to heat for about 30 minutes.
In a mixing bowl, combine 1 cup of cornmeal mix, 1/2 cup of all-purpose flour, a dash of salt, 1/2 teaspoon of baking powder, and 1 tablespoon of baking soda.
In another bowl, mix together 1/2 cup of buttermilk and 1 egg, then combine with the dry ingredients.
Mix until well combined and let it sit for a few minutes.
Remove the hot skillet from the oven, pour the excess oil into the cornmeal mixture, and mix well.
Pour the batter into the hot skillet and return it to the oven.
Bake for about 20 minutes or until the top is golden brown.
