Jalapeño Popper Dip

1/2 cup chopped bacon
1/2 cup diced jalapeños
1/2 cup diced onion
1/2 cup half and half
8 oz cream cheese
1 tsp paprika
1/2 tsp salt
1-2 tsp hot sauce
1 cup grated Monterey jack cheese
1 cup grated cheddar cheese
1/2 cup sour cream

Preheat the oven to 375°F.

Grease an 8x8 baking dish or a small au gratin pan and set aside.

Heat a skillet over medium-high heat and add the chopped bacon. Cook until crispy, stirring occasionally. Remove the bacon with a slotted spoon, leaving the grease in the pan.

Add the diced jalapeños and onion to the pan and sauté until softened, about 6 minutes.

Reduce heat to low and add the half and half and cream cheese to the cooked vegetables. Stir until creamy and melted.

Add paprika, salt, and hot sauce, and stir again.

Remove from heat and mix in sour cream, bacon, and half of each of the grated cheeses (Monterey jack and cheddar).

Transfer the mixture to the prepared baking dish and sprinkle the remaining cheese on top. Optionally, add sliced jalapeño wheels for presentation.

Bake for 20-25 minutes or until bubbly around the edges. Serve with tortilla chips.
