Roast the vegetables in the oven until golden-brown and delicious.
Add 4 unpeeled garlic cloves to the baking sheet to roast with the vegetables.
In a skillet, sauté mushrooms until cooked.
Add vegan ground beef (like Trader Joe's version) to the skillet along with frozen corn, peas, and green beans, then turn off the heat.
Drain the soaked cashews and add them to a blender with onion powder, sea salt, dried dill, miso paste, nutritional yeast, black pepper, roasted garlic cloves, lemon juice, and soy milk to create a creamy sauce.
Add the roasted vegetables to the pan with the sauce and mix well.
Line tater tots on top of the mixture, ensuring space between each for crispiness.
Season tater tots with salt and pepper, then bake in the oven until crispy.
Let the casserole sit for 5-10 minutes before serving, then sprinkle fresh chives on top.
