Prepare half of a small breadfruit, weighing about 1 pound, and peel it.
In a pot of boiling water, add the breadfruit, 4 tablespoons of cooking oil, and salt to taste.
Cook the breadfruit until tender, checking for doneness.
In a saucepan over medium heat, melt 4 tablespoons of butter to make a roux.
Add 4 tablespoons of flour to the melted butter and stir continuously for about a minute to cook out the flour.
Slowly add 2 cups of almond milk to the roux, stirring constantly to avoid lumps.
Allow the cheese sauce to simmer for about 8 to 10 minutes while stirring occasionally.
Once the breadfruit is tender, drain it and combine it with the cheese sauce.
Add 1/2 teaspoon of white pepper and 1/2 teaspoon of black pepper to the mixture.
Mash the breadfruit and cheese sauce together until smooth, adding a little water if necessary to help with mashing.
Taste the cheesy breadfruit mash and adjust seasoning if needed.
